I am a danger to myself in the kitchen, and I have the scars to prove it!! I can cook, just not well and I HATE doing it! But this book has turned me into a GOURMET in just a week. My BF thinks aliens have taken me over, because every night I tell him I'm making "something new".
The recipes are great and made with things you probably already have in your pantry. She gives measurements, but then also follows up with things like "handful", "twice around the pan" and since I just eyeball everything anyway, they work well for me. A handful of this, a bit of that...I find a recipe with ingredients I like and then add them to suit my taste. If I don't have exactly what's called for, I improvise. EASY!
They usually take me a little over 30 minutes to make, but I'm slow...and I'm usually watching TV or doing 4 other things at the same time. FAST!
These recipes are for more than 2, so I just pare them down to suit us. I've made the stuffed portabello mushrooms, open faced calzones, bruschetta, chickpea and red pepper veggie dip, portabello "fries" and warm cherry tomato salad and EVERY one of them was wonderful! If I can do it, ANYONE can! YUMMY!
If you're lacking time and you still want a great meal that you can use for entertaining too, this is the book for you.
